If I use a 30-amp double pole breaker, would it run at the same temperature (which gets too hot for washing dishes without the cold water tap on full flow)? I was wondering if lower amps would make it not get as hot.

Answer
Lower amps would just trip the breaker, since the elements are always going to call for that.  What you need to do is reduce the flow. Please see page 13 of the installation manual.
